Method
- Add oil to the griddle and cook chicken over medium heat. Season with the salt, pepper, paprika, and a few dashes of Tajin seasoning. Cook for about 6–8 minutes until golden and fully cooked.
- On the other side of the surface add the corn and garlic and let saute and warm up until you are ready to assemble. Then on the furthest side (I even had the burner off- put the rice down add a few squirts of water and cover to let steam while finishing up).
- Once the chicken is pretty much done cooking turn the heat down to low. Add the butter, hot honey, lime juice, and hot sauce to the chicken. Toss to combine and let cook until the sauce starts to thicken up.
- Spoon the warm rice into bowls, add the hot honey chicken, then add toppings of choice. Make sure to squeeze a little more fresh lime juice, a few dashes of hot sauce, and another dash of Tajin seasoning for the perfect bowl.
Stove Top Instructions:
- Heat a large skillet over medium-high heat. Then cook chicken in batches if needed for best browning. Add the sauce ingredients and toss to combine. In a small pot or pan (if you want it separate), warm up the corn and garlic as well. Assemble bowls as desired.
