Italian Sausage and Tortellini Soup

Ingredients
  

  • 1 lb ground italian sausage
  • 1 red bell pepper chopped
  • 1 shallot diced or small onion
  • 1 medium banana pepper chopped
  • 1 clove garlic minced
  • 1 14.5 oz can diced tomatoes Basil, Garlic, Oregano Flavor
  • 32 oz. vegetable broth
  • 24 oz. tomato sauce
  • 3 cups water
  • 2 8.8 oz packages of cheese tortellini
  • salt and pepper to taste

Method
 

  1. In large stock pot over medium heat brown meat with peppers, onion, and garlic.
  2. Drain fat.
  3. Add the water, tomatoes, tomato sauce and vegetable broth.
  4. Let simmer about 20 minutes.
  5. Add the tortellini and let simmer another 5 minutes.
