Make cake mix according to box (mine called for 3 eggs, 1 cup water, and 1/3 cup vegetable oil.
Add the lemon zest and mix well.
Pour batter into a greased 9x13 pan and add cream cheese dollops and blueberries.
Bake at 350 for about 26 minutes.
Let cake cool then poke holes using the end of a wooden spoon or similar.
Make lemon pudding mix (with milk).
Pour lemon pudding over cooled cake.
Add 1 tbsp vanilla to the whipped topping and spread over pudding layer.
Add more blueberries or lemon zest on top for garnish!
