Maple Pecan Pumpkin Cupcakes

These easy pumpkin cupcakes are topped with a maple cream cheese frosting and pecans!

Ingredients
  

  • 1 box spice cake mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup pure pumpkin
  • 1/2 cup chopped pecans optional
For Frosting
  • 2 cups powdered sugar
  • 4 oz cream cheese room temperature
  • 4 tbsp butter room temperature
  • 2 tbsp maple syrup
  • cinnamon
  • pecans

Method
 

  1. In a large bowl combine boxed cake mix, eggs, vegetable oil, and pumpkin.
  2. With an electric mix beat until well combined for about 2 minutes.
  3. Fold in chopped pecans.
  4. Fill lined cupcake pan with batter about 3/4 full per cup.
  5. Bake at 350 for about 18 minutes (or according to box).
For frosting:
  1. In bowl of your electric mixer, combine powdered sugar, cream cheese, butter, and maple syrup.
  2. Beat until well combined and powdered sugar in dissolved.
  3. Fill a piping bag or ziplock bag and pipe onto cupcakes.
  4. Sprinkle with cinnamon and top with more pecans.
