Mexican Smoked Stuffed Peppers (with Ground Chicken)

These Mexican Smoked Stuffed Peppers are loaded with ground chicken, salsa, cheese and smoked to perfection! Easy with just a few ingredients, too!

Ingredients
  

  • 3-4 Bell Peppers
  • 1 lb. ground chicken
  • 1 cup salsa
  • 1/2 cup Mexican Shredded cheese plus more for topping
  • 4 oz. softened cream cheese
  • 1 green onion chopped
  • 1 package low sodium taco seasoning

Equipment

  • 1 smoker or pellet grill

Method
 

  1. Wash and cut the peppers in half lengthwise. Take out the seeds. I left the part of the stem just to hold the filling in better.
  2. In a mixing bowl, combine the ground chicken, taco seasoning, green onions, salsa, cream cheese, and shredded cheese. Mix until well combined.
  3. Stuff peppers. Add the mixture to the peppers.
  4. Transfer to the smoker and place directly on smoker grates or in a baking dish. Let smoke at 225 degrees for about 3 hours.
  5. Sprinkle with a bit more cheese on top and finish cooking until the internal temperature reaches 165 degrees F and the cheese is melted.
  6. Serve warm with additional salsa, sour cream, green onions, hot sauce, or toppings of choice!
Oven instructions
  1. Prepare as directed and bake at 350 degrees until chicken reaches 165 degrees. (Probably about 45 minutes)
