Method
- Wash and cut the peppers in half lengthwise. Take out the seeds. I left the part of the stem just to hold the filling in better.
- In a mixing bowl, combine the ground chicken, taco seasoning, green onions, salsa, cream cheese, and shredded cheese. Mix until well combined.
- Stuff peppers. Add the mixture to the peppers.
- Transfer to the smoker and place directly on smoker grates or in a baking dish. Let smoke at 225 degrees for about 3 hours.
- Sprinkle with a bit more cheese on top and finish cooking until the internal temperature reaches 165 degrees F and the cheese is melted.
- Serve warm with additional salsa, sour cream, green onions, hot sauce, or toppings of choice!
Oven instructions
- Prepare as directed and bake at 350 degrees until chicken reaches 165 degrees. (Probably about 45 minutes)
