No Bake Lemon Blueberry Cheesecake Parfaits

Ingredients
  

  • 1 cup heavy cream
  • 8 oz. Cream Cheese softened
  • 3 tbsp Powdered Sugar
  • 1 Lemon Juiced
  • 1 tsp vanilla
  • 1 cup blueberries or more to your liking
  • Crushed Graham Crackers optional

Instructions
 

  • First make your whipped cream by adding the heavy cream to a mixing bowl. Mix with a hand mixer until it doubles and soft peaks form. Set aside.
  • In another bowl, beat the softened cream cheese, vanilla, powdered sugar, and lemon juice until I'll combined. Then add in the homemade whipped cream and mix a little longer.
  • Then set out your parfait cups (6-8) and spoon a little of the mixture in. And a handful of blueberries, then top with the rest of the cheesecake filling. Top with another blueberry for garnish.
  • Then cover and refrigerate for about 2 hours.
  • When ready to serve, serve as is or crush some graham crackers on top for a little crunch.
