No Bake Lemon Blueberry Cheesecake Parfaits

- 1 cup heavy cream
- 8 oz. Cream Cheese softened
- 3 tbsp Powdered Sugar
- 1 Lemon Juiced
- 1 tsp vanilla
- 1 cup blueberries or more to your liking
- Crushed Graham Crackers optional
First make your whipped cream by adding the heavy cream to a mixing bowl. Mix with a hand mixer until it doubles and soft peaks form. Set aside.
In another bowl, beat the softened cream cheese, vanilla, powdered sugar, and lemon juice until I'll combined. Then add in the homemade whipped cream and mix a little longer.
Then set out your parfait cups (6-8) and spoon a little of the mixture in. And a handful of blueberries, then top with the rest of the cheesecake filling. Top with another blueberry for garnish.
Then cover and refrigerate for about 2 hours.
When ready to serve, serve as is or crush some graham crackers on top for a little crunch.
