No Bake Pumpkin Chocolate Chip Oatmeal Bars

These healthy oatmeal bars are great for a snack, grab and go breakfast, or even for lactation.

Ingredients
  

  • 1 cup pumpkin
  • 2 cups oats
  • ¼ cup honey
  • 1 tbsp flax
  • 1 tbsp chia seeds
  • ½ cup chocolate chips
  • Cinnamon optional

Method
 

  1. In a large sauce pan, combine the pumpkin, oats, and honey.
  2. Heat over medium heat and stir.
  3. Add in the flax an chia seeds and stir again.
  4. Remove from heat and fold in the chocolate chips.
  5. Pour into a bar pan or 8x8 baking dish.
  6. Optional Step: Sprinkle with a little cinnamon on top.
  7. Refrigerate and cut into desired sized bars.
  8. Wrap individually and freeze and grab one when you want one!

Note** This has more of a wet texture. That is why I freeze them. You can keep them in the refrigerator, too.
