Pumpkin Eclair Cake

This Pumpkin Eclair Cake is a perfect dessert for Fall. No baking required, feeds a crowd, and has layers of creamy pumpkin, graham crackers, and chocolate.

Ingredients
  

  • 1 box vanilla pudding
  • 2 cups milk
  • 1 cup pumpkin
  • 1 tsp cinnamon
  • 1 8 oz. container of whipped topping
  • 1 box graham crackers
  • 1 can chocolate frosting

Method
 

  1. Make the pudding by whisking the milk and pudding together until thickened.
  2. Add pumpkin and cinnamon and mix well.
  3. Fold in whipped topping.
  4. Place graham crackers in the bottom of 9x13 pan to cover the pan.
  5. Then spread 1/2 of the pudding mixture over graham crackers.
  6. Repeat layers then on the top layer lay the graham crackers face down to create a flat surface.
  7. Take lid and foil off of frosting and microwave for 30 seconds, stir, and pour over the graham crackers. Spread to cover entire surface.
  8. Refrigerate at least 6 hours and enjoy!

Note: Refrigerate for a few minutes before covering so that the frosting doesn't stick to the lid/plastic wrap.
