This Cheesy Beef and Potato Soup is warming for these cold winter nights. Just a few ingredients and comes together easily with the help of the slow cooker.
6small- medium potatoes (about 6 cups) washed and cubed
3 Cloves of garlicminced
1cupsliced carrots
132 oz. Reduced Sodium Chicken Broth
2cups water
1beef bouillon cube
132 oz.block Velveeta or store brand
1cupmilk
salt and pepper to taste
Instructions
First brown the ground beef and chopped onions on the stove top over medium heat. Drain.
Add the cooked ground beef mixture, cubed potatoes, carrots, garlic, chicken broth, water, salt, pepper, and the beef bouillon cube to the slow cooker. Give everything a stir and cover.
Set the slow cooker on HIGH for five hours total. (or if non-programmable, cook on high 4 hours and proceed to next step). Note: can also cook on low 7-8 hours.
After 4 hours add in the cubed Velveeta cheese and milk. Cover and finish cooking (1 hour longer) or until Velveeta is completely melted and potatoes are cooked.
Stir and serve hot with some oyster crackers and shredded cheese if desired.
