Method
- First brown the ground beef and chopped onions on the stove top over medium heat. Drain.
- Add the cooked ground beef mixture, cubed potatoes, carrots, garlic, chicken broth, water, salt, pepper, and the beef bouillon cube to the slow cooker. Give everything a stir and cover.
- Set the slow cooker on HIGH for five hours total. (or if non-programmable, cook on high 4 hours and proceed to next step). Note: can also cook on low 7-8 hours.
- After 4 hours add in the cubed Velveeta cheese and milk. Cover and finish cooking (1 hour longer) or until Velveeta is completely melted and potatoes are cooked.
- Stir and serve hot with some oyster crackers and shredded cheese if desired.
