These Slow Cooker Ground Beef Taco Bowls are super easy, budget friendly, and perfect for a weeknight meal.

  • 1 Slow Cooker

Ingredients
  

  • 1 lb ground beef
  • 1 packet low sodium taco seasoning plus water
  • 1 1/2 cups white rice
  • 1 1/2 cups water
  • 1 cup salsa
  • 1/2 can of black beans or full (drained and rinsed)
  • 1 15 oz. can southwest style corn drained
  • 1 1/2 cups of Shredded Mexican Blend cheese

Instructions
 

  • First brown your ground beef over medium heat, drain any grease and add in the taco seasoning and water. Stir.
  • In the slow cooker add in the white rice first, water, and then add the ground beef mixture on top of the rice.
  • Then spread the salsa on the top of the meat, then add the corn and black beans.
  • Top with cheese, cover and cook on HIGH for about 2.5-3 hours until rice is tender.
    Cooking times may vary according to your appliance.
    *If cooking on low 4-5 hours NOTE: check around 3 1/2 hours).
  • Then spoon into bowls and add more salsa, sour cream, or toppings of choice.
