1packet low sodium taco seasoningplus water called for on packet
1 1/2cupswhite rice
1 1/2cupswater
1cupsalsa
1/2can of black beansor full (drained and rinsed)
1 15 oz.can southwest style corndrained
1 1/2cupsof Shredded Mexican Blend cheese
Instructions
First brown your ground beef over medium heat, drain any grease and add in the taco seasoning and water. Stir.
In the slow cooker add in the white rice first, water, and then add the ground beef mixture on top of the rice.
Then spread the salsa on the top of the meat, then add the corn and black beans.
Top with cheese, cover and cook on HIGH for about 2.5-3 hours until rice is tender.Cooking times may vary according to your appliance. *If cooking on low 4-5 hours NOTE: check around 3 1/2 hours).
Then spoon into bowls and add more salsa, sour cream, or toppings of choice.
