Slow Cooker Ground Beef Taco Bowls

These Slow Cooker Ground Beef Taco Bowls are super easy, budget friendly, and perfect for a weeknight meal.

Ingredients
  

  • 1 lb ground beef
  • 1 packet low sodium taco seasoning plus water called for on packet
  • 1 1/2 cups white rice
  • 1 1/2 cups water
  • 1 cup salsa
  • 1/2 can of black beans or full (drained and rinsed)
  • 1 15 oz. can southwest style corn drained
  • 1 1/2 cups of Shredded Mexican Blend cheese

Equipment

  • 1 Slow Cooker

Method
 

  1. First brown your ground beef over medium heat, drain any grease and add in the taco seasoning and water. Stir.
  2. In the slow cooker add in the white rice first, water, and then add the ground beef mixture on top of the rice.
  3. Then spread the salsa on the top of the meat, then add the corn and black beans.
  4. Top with cheese, cover and cook on HIGH for about 2.5-3 hours until rice is tender.
    Cooking times may vary according to your appliance.
    *If cooking on low 4-5 hours NOTE: check around 3 1/2 hours).
  5. Then spoon into bowls and add more salsa, sour cream, or toppings of choice.
