Method
- Wash and cut the bell peppers in half removing the tops and seeds. Season with a little of the Beef BBQ Rub.
- In a medium sauté pan cook the ground beef with jalapeno and a little BBQ rub. Drain any grease. (Or get crazy and cook the meat in the smoker, too)
- In a separate pot boil the noodles according to package.
- Then combine noodles with ground beef and add the milk, butter, and cheese packet and mix it all up.
- Spoon the mixture into each half of the peppers and place on a foil lined baking pan. Sprinkle with some grated cheese.
- Place in pre heated smoker and smoke at 225 degrees for about 1 hour and 15 minutes.
- Add extra shredded cheese on top and let cook for another 5 minutes.
Notes
To bake in the oven, follow all steps except bake in the oven at 350 degreed for about 35-45 minutes until peppers are softened.
