Smoked Mac N Cheese Stuffed Peppers
These delicious stuffed peppers are loaded with beef and Mac N Cheese then cooked to perfection in the smoker!

bell peppers
or about 6 smaller

jalapeno
chopped
beef BBQ rub
to taste

box
Cheetos Zesty Jalapeno Mac N Cheese
or regular (made according to box)
milk & Butter
for mac n cheese
shredded cheese
Instructions
Wash and cut the bell peppers in half removing the tops and seeds. Season with a little of the Beef BBQ Rub.
In a medium sauté pan cook the ground beef with jalapeno and a little BBQ rub. Drain any grease. (Or get crazy and cook the meat in the smoker, too)
In a separate pot boil the noodles according to package.
Then combine noodles with ground beef and add the milk, butter, and cheese packet and mix it all up.
Spoon the mixture into each half of the peppers and place on a foil lined baking pan. Sprinkle with some grated cheese.
Place in pre heated smoker and smoke at 225 degrees for about 1 hour and 15 minutes.
Add extra shredded cheese on top and let cook for another 5 minutes.
Notes
To bake in the oven, follow all steps except bake in the oven at 350 degreed for about 35-45 minutes until peppers are softened.
