Method
- Preheat the smoker to 250 degrees.
- Lay chicken breasts out and season with BBQ rub.
- In a medium mixing bowl combine the softened cream cheese, poblano peppers, and hot pepper cheese.
- Mix until all ingredients are well incorporated.
- Spoon the cream cheese mixture evenly onto each chicken breast.
- Roll the chicken up and use a toothpick to secure.
- Wrap each chicken breast with 2-3 pieces of bacon and tuck in the ends.
- Place on the grill or smoker grates and close the lid. I placed a pan underneath to to catch drippings.
- Smoke for about 1 1/2 - 2 hours or until the bacon is cooked and the internal temperature of the chicken is at least 165 degrees.
- Remove tooth picks and serve hot!

Notes: If using whole package of bacon, some bundles may have 2 pieces of bacon, some may have 3. etc
