Smoked Poblano Pepper Stuffed Chicken

Ingredients
  

  • 6 Chicken Breasts thin sliced
  • 1 8 oz. Package of Cream Cheese softened
  • 1 Poblano Pepper diced
  • 1 Cup Shredded Hot Pepper Cheese
  • Chicken BBQ Rub or seasonings of choice to taste
  • 1 16 oz, Package of bacon or about 12-15 slices

Equipment

  • toothpicks
  • Smoker or Grill
  • wood pellets

Method
 

  1. Preheat the smoker to 250 degrees.
  2. Lay chicken breasts out and season with BBQ rub.
  3. In a medium mixing bowl combine the softened cream cheese, poblano peppers, and hot pepper cheese.
  4. Mix until all ingredients are well incorporated.
  5. Spoon the cream cheese mixture evenly onto each chicken breast.
  6. Roll the chicken up and use a toothpick to secure.
  7. Wrap each chicken breast with 2-3 pieces of bacon and tuck in the ends.
  8. Place on the grill or smoker grates and close the lid. I placed a pan underneath to to catch drippings.
  9. Smoke for about 1 1/2 - 2 hours or until the bacon is cooked and the internal temperature of the chicken is at least 165 degrees.
  10. Remove tooth picks and serve hot!

Notes

Notes: If using whole package of bacon, some bundles may have 2 pieces of bacon, some may have 3. etc
