Method
- Wash up your potatoes and cut them into thinner slices (about 1/4 inch). The thinner they are the faster they will cook.
- Lay a few pieces of foil down. I like one to do in one direction and then one in the other. Here I made 2 different packets.
- In one add in half the sliced potatoes, half the garlic, 2 tbsp butter, salt & pepper, green pepper, onions, a little drizzle of olive oil, and about 1 1/2 tbsp water to help the potatoes steam.
- In the other packet- add in the rest of the potatoes, butter, garlic, salt & pepper, drizzle of olive oil, and about 1 1/2 tbsp water.
- Wrap the foil up and around the potatoes and seal completely.
- Add the foil packets right to the smoker grates and smoke at 225 F for 1 hour then you can raise the temperature to 250 F for another hour or so (until fork tender).
- If you are adding cheese, add the cheese in and let melt for a few minutes longer.
Grill Instructions
- Follow the same steps as above and place the foil pack on a preheated grill over medium heat and cook for about 30 minutes or until the potatoes are tender when pierced with a fork.
Campfire Instructions
- Place the packets directly on top of the hot coals or on a grill grate over the fire. Cook for about 30 minutes or so, flipping occasionally, until the potatoes are tender and cooked throughout.
