Smoked Queso with Chicken

This Smoked Queso with Chicken recipe is great for game day, entertaining, or any time you want to change things up for a fun appetizer.

Equipment

  • 1 cast iron pan or aluminum pan

Ingredients
  

  • 2 chicken breasts about 1 lb.
  • Salt, pepper, garlic powder & chili or BBQ rub
  • 8 oz. Pepper Jack Cheese shredded
  • 16 oz. Velveeta Cheese, cubed or store brand
  • 4 oz. Cream Cheese cubed
  • 1 10 oz. can of diced tomatoes with green chiles with liquids
  • 1 jalapeno diced
  • 1/2 cup milk

Instructions
 

  • First trim and season the chicken breasts with salt, pepper, garlic powder, and chili powder. Rub it in.
  • Transfer out to your smoker and let smoke for about 2 hours at 225 degrees until internal temp reaches 160. (it will finish cooking in the mixture).
  • Then chop the chicken up (or you can shred it). Then grab your cast iron pan and add in the rest of the ingredients.
  • Transfer out to the smoker and let smoke for about an hour and then give everything a stir. Continue to cook about 30 minutes longer until the mixture is hot throughout.
  • Then serve warm with chips, pretzels, or bread.
