Course Main Course, Side Dish
1 pellet grill
1 Sharp Knife
wood pellets
- 1 spaghetti squash
- olive oil
- salt & pepper
- garlic powder
- cherry tomatoes
- 4 tbsp butter
- parmesan cheese
- red pepper flakes
Grab out a long sharp knife and get to cutting. The easiest way is to slice down the one side (lengthwise), then flip over and do the same. There will be some carving involved. Then cut off the stem.
Use a large spoon to scoop out the large seeds and top layer of the squash strands. Drizzle a little olive oil over the squash along with some salt, pepper, and garlic powder. Rub it in a little bit.
Preheat the smoker to 225 degrees F. Transfer the squash to the smoker grates skin side down. Close the lid and smoke for anywhere between 2.5-4 hours depending on the size of you squash. (Note: If you are getting antsy towards the end...just raise the temperature of the smoker to finish it off)
For the Smoked Cherry Tomatoes
Grab a little pan and add the cherry tomatoes to it and drizzle with a little oil. I added in the cherry tomatoes about an hour after I put the squash on. Let cook along side the squash. If these are cooked before the squash is done just pull them off and set aside.
Once the squash is soft enough to your liking (at least fork tender), pull it off. Carefully use a fork to shred the spaghetti squash into strands.
Add in some butter, parmesan cheese, the red pepper flakes, and the smoked cherry tomatoes.
