Peel and slice the eggplant into 1/4-1/2 inch pieces.
Then dip each slice into the flour.
In a separate bowl whisk together the egg and cold water.
Then dip the eggplant into the egg wash and then into panko bread crumbs.
Place in Air Fryer and set cook time for 8 minutes at 400 degrees. Flip half way.
Once crispy and cooked rearrange the eggplant into a row and top with diced jalapenos.
Then add marinara sauce and mozzarella cheese.
Return to Air Fryer and cook for another 5-6 minutes at 400 degrees until cheese is melted and baked to your liking.
Sprinkle with some red pepper flakes and enjoy!
