Cut the large chicken breasts in half and pound them down if desired. Or use thin chicken breasts.
Place in a zip-lock bag and add the honey mustard. Marinate until ready to cook (I recommend at least 20 minutes).
Heat up your cast iron skillet or pan and add a little olive oil or non stick spray.Add the chicken breasts and let cook for a few minutes on each side. I like to use a meat thermometer. Once the chicken is around 160 degrees F, brush with a little more honey mustard. Add chopped bacon and cheese and let cook a few minutes until cheese starts to melt and chicken reaches an internal temperature of 165 or is no longer pink.
Add a drizzle of some bbq sauce to each chicken breast. If desired, and add some chopped green onions on top, too.
Then serve hot with sides of choice.
