Equipment

  • 1 Pellet Grill or Smoker
  • wood pellets
  • 1 Sharp Knife

Materials

  • 1 rack Ribs
  • Mustard
  • BBQ Rub
  • Plastic Wrap
  • BBQ Sauce

Instructions

  • Grab a sharp knife and flip the ribs to the backside. Get the knife under the silver skin (the white tight connective tissue) and carefully peel back the silver skin. You will use a combination of the knife and pulling with your other hand.
  • Rubs the ribs down with some mustard for a binder.
  • Season the ribs with your favorite BBQ rub or combination of seasonings.
  • Grab some plastic wrap and wrap them up. Refrigerate until ready to cook. This is best over night but if you don't have the time at least a few hours will work.
  • When ready to cook pre heat the smoker to 225 degrees F.
  • When you are ready to cook, unwrap the ribs and insert your wireless thermometer if using. Place the rack of ribs directly on to the smoker grates and close the lid.
  • For Baby Back's plan for 4-5 hours and St. Louis Style 5-6 hours.
  • When you have approximately an hour left to go, add your favorite bbq sauce to the ribs.
  • Let continue cooking until the internal temperature reaches 190 degrees F.
  • Pull them off, let rest about 10 minutes. Then slice and serve warm with more sauce if desired.
