In a medium mixing bowl combine the tub of whipped topping, diced strawberries, and vanilla. Mix until well incorporated.
Spoon some of the mixture onto half of the graham cracker. Spread evenly and top with other graham cracker.
Smooth the sides so that the mixture fills to the edges of the sandwiches.
Dip the sandwiches into a small bowl/plate of mini chocolate chips.
Place all of the sandwiches into a 9x13 baking dish, using a layer of parchment paper or wax paper to layer. Freeze for at least 4-6 hours before enjoying!
