Summer Berry Cupcakes

These Summer Berry Cupcakes are perfect all Summer long or for Memorial Day or Fourth of July.

Ingredients
  

  • 1 box white cake mix
  • 4 egg whites
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 1/2 cup blueberries
  • 1/2 cup diced strawberries
For frosting:
  • 2 cups powdered sugar
  • 4 tbsp butter
  • 4 oz cream cheese

Method
 

  1. In a large bowl add cake mix, egg whites, water, and vegetable oil.
  2. Beat for about 2 minutes until everything is well combined.
  3. Fold in strawberries and blueberries.
  4. Spoon into a lined cupcake pan about 3/4 full.
  5. Bake at 350 for about 16-18 minutes.
For frosting:
  1. In a medium bowl combine powdered sugar, cream cheese, and butter.
  2. Beat until smooth.
  3. Fill a piping bag or Ziplock bag and pipe onto cupcakes.
  4. Top with additional blueberries and diced strawberries for garnish.
