Method
- In a large stock pot, brown chorizo sausage and peppers and onions until meat is mostly cooked and vegetables are fragrant.
- Drain grease and return to pot.
- Add taco seasoning and stir.
- Add canned tomatoes, sauce, can of corn, and beer.
- Let simmer covered for at least an hour.
Notes
*Optional- black beans or extra fresh tomatoes from the garden
Serve with favorite toppings, sour cream, cheese, and tortilla chips!
