Turkey Chorizo Mexican Chili

This Turkey Chorizo Mexican Chili is super flavorful and simple to make. Great to change up your traditional bowl of chili.

Ingredients
  

  • 2 1 (LB) rolls of Chorizo Seasoned Turkey Sausage (or regular chorizo)
  • 2 jalapenos
  • 1 banana pepper chopped
  • 1 onion chopped
  • 1 green pepper chopped
  • 1 29oz can tomato sauce
  • 1 28oz can crushed tomatoes
  • 1 29oz can diced tomatoes with green chiles
  • 1 15.25oz can corn drained
  • 1 pkg taco seasoning
  • 12 oz light beer or amber ale

Method
 

  1. In a large stock pot, brown chorizo sausage and peppers and onions until meat is mostly cooked and vegetables are fragrant.
  2. Drain grease and return to pot.
  3. Add taco seasoning and stir.
  4. Add canned tomatoes, sauce, can of corn, and beer.
  5. Let simmer covered for at least an hour.

Notes

*Optional- black beans or extra fresh tomatoes from the garden
Serve with favorite toppings, sour cream, cheese, and tortilla chips!
