Veggie Tray Mini Naan Pizzas

These Veggie Tray Mini Naan Pizzas are loaded with fresh veggies come together quickly with no baking required. These make a great meal prep idea for lunch or appetizer for a party.

Ingredients
  

  • 1/4 cup chopped broccoli
  • 1/4 cup chopped cauliflower
  • 1/4 cup chopped mini sweet red peppers
  • 1/4 cup shredded carrots
  • 4 Mini Naan Breads I used Stonefire Original Mini Naan
  • 4 oz. Chive & Onion flavored cream cheese spread
  • 1/4 cup shredded cheddar cheese

Method
 

  1. Wash and prep all of the vegetables.
  2. Lay down the naan breads out on a clean surface.
  3. Spread some of the cream cheese spread on each bread.
  4. Add the chopped veggies on top of the cream cheese.
  5. Sprinkle with some cheddar cheese to your liking.
  6. Enjoy or cover and refrigerate until ready to serve.
