Preheat the oven to 325°.
Spray two loaf pans, each 9 inches long by 5 inches wide, with non-stick cooking spray.
In a large bowl, beat together the butter and sugar using an electric mixer.
Add the vanilla, eggs, and bananas.
Beat at medium speed until well blended, occasionally scraping down the sides of the bowl with a spatula.
In another bowl, sift together the flour, baking soda, and salt.
Add the dry ingredients to the bowl of wet ingredients and blend at medium speed until all the ingredients are mixed together.
Add the pecans, and mix in with a spoon or spatula.
Divide the banana bread batter evenly between the two loaf pans.
Place the pans in the oven and bake for approximately 60 minutes, or until a knife inserted into the center of the loaves comes out clean.
Cool the pans for approximately 20-30 minutes before removing the banana bread.
