Air Fryer Irish Nachos
These Air Fryer Irish Nachos are a quick and and easy meal or appetizer. Crispy potatoes with cheese, bacon, and toppings of choice.

- 6 small (or 3 large) russet potatoes washed and thinly sliced
- 2 tablespoons olive oil
- salt, pepper, garlic powder
- 1- 1/2 cup cheddar cheese shredded
- 1 cup chopped bacon or bacon bits
- 2-3 jalapenos
For the toppings
- 2 green onions diced
- sour cream
- fresh chopped tomatoes or pico de gallo
Wash the potatoes and thinly slice.
Add the potatoes, olive oil, salt, pepper, and some garlic powder to a bowl and toss to combine.
Pour the potatoes onto the tray or basket of your Air Fryer and set the Air Fryer to 400 degrees F for about 15-20 minutes. Flipping the potatoes half way.
Once potatoes are fork tender and crisp to your liking sprinkle with the cheese, bacon (and if you want the jalapenos cooked a bit add them, too)
Place back in the Air Fryer (at 400) for about 2-3 minutes, until the cheese is bubbly.
Top with the green onions, tomatoes, (fresh jalapenos if desired), and sour cream.
