Heat the griddle to low-medium heat and cook the bacon.
While that is cooking combine the ground beef, eggs, Burger rub/seasoning, and BBQ Sauce in a medium bowl and use you hands to mix to combine.
Then form the meat mixture into 8 balls. (or smaller for regular buns/slider buns).
Once the bacon is cooked, remove from heat.
Add some butter to the griddle and add on the sliced onions. Let cook for a few minutes.
Add the burger balls on top of the onions. Use a greased press or your spatula to press the meat down. (can use parchment paper to help with sticking).
Let cook for a few minutes and then flip the burgers.
To the other end of the griddle going low, toss on your Texas Toast Slices (or buns) with a little butter.
Top the burgers with cheddar cheese slices and bacon. Let the cheese melt a bit.
Once the Texas Toast is toatsed to your liking add the burgers to the toast top with the other slice and remove from heat.
Add a little more BBQ Sauce for serving and enjoy hot.
