Easy Cheesy Potato Soup

This easy soup comes together in about 20 minutes with just a few ingredients!

Ingredients
  

  • 4 cups of water
  • 4 chicken bouillon cubes
  • 1 cup chopped celery
  • 2 1/2 cups cubed potatoes
  • 1 lb of cheese spread such as Veleveeta, cut into cubes
  • 2 10. 5 oz cans of cream of chicken soup, plus 1/2 cup water
  • Salt & Pepper to taste

Method
 

  1. Boil the 4 cups of water and add bouillon cubes. Stir until dissolved.
  2. Add the celery and potatoes and cook for about 15 to 20 minutes until tender.
  3. Mix in cans of soup, additional water, and cubed cheese spread.
  4. Heat until the cheese is melted.
  5. Salt and pepper to taste.
  6. Enjoy hot with additional cheese, crackers, or toppings of choice.
