Okay I have been experimenting with different soups lately and I created this Easy Cheesy Potato Soup and loved it! Just a few ingredients and this soup cooks in about 20 minutes. Perfect for a quick weeknight meal!
I love simple recipes and this Easy Cheesy Potato Soup is just that! Loaded with flavor, super hearty, and the prefect way to warm you up on these cold winter nights. Restaurant quality that can be made easily at home. This is a very nice change of pace from just ordinary potato soup!
What you need for this Easy Cheesy Potato Soup
- Chicken Bouillon Cubes
- Celery
- Potatoes
- Velveeta Cheese (or similar)
- Cream of Chicken Soup
- Salt & Pepper

How to make this Easy Cheesy Potato Soup on the Stove Top
First to make this easy recipe all you have to do is boil the water and add the chicken bouillon cubes. Let dissolve and then add the celery and potatoes. Cook for about 15 minutes until the potatoes are tender.
Next you add the cream of chicken soup cans, cubed cheese, and additional water. Keep stirring until the cheese is melted and simmer. Do not let it boil. Add a little bit of salt and pepper to taste and heat until hot throughout and serve!
Additional Toppings and Sides for this Cheesy Potato Soup
We topped ours with additional shredded cheese and some Oyster Crackers. Feel free to add some chopped up bacon or chives on top for some extra flavor! I also made some Irish Oatmeal Muffins (recipe coming soon) which was super tasty as a side. Rolls or French bread would taste great, too!
Can you freeze this Potato Soup?
Yes absolutely. This recipe doesn’t make the biggest portion to start with but can always double to freeze some for next time. I have been freezing sauces like my Dad’s Slow Cooker Spaghetti Sauce and my Instant Pot Steak House Chili in Zip Lock bags once cooled so that they lay flat in the freezer.

Easy Cheesy Potato Soup
Ingredients
- 4 cups of water
- 4 chicken bouillon cubes
- 1 cup chopped celery
- 2 1/2 cups cubed potatoes
- 1 lb of cheese spread such as Veleveeta, cut into cubes
- 2 10. 5 oz cans of cream of chicken soup, plus 1/2 cup water
- Salt & Pepper to taste
Instructions
- Boil the 4 cups of water and add bouillon cubes. Stir until dissolved.
- Add the celery and potatoes and cook for about 15 to 20 minutes until tender.
- Mix in cans of soup, additional water, and cubed cheese spread.
- Heat until the cheese is melted.
- Salt and pepper to taste.
- Enjoy hot with additional cheese, crackers, or toppings of choice.
