Easy Chocolate Easter Egg Cupcakes

These chocolate Easter Egg cupcakes are easy to make, festive, and delicious.

Ingredients
  

  • 1 15 oz. Box of your favorite Chocolate Cake Mix made according to box
  • Eggs whatever it calls for add an extra one
  • water
  • vegetable oil
  • 1 3.4 oz box instant chocolate pudding
  • 1/2 cup chocolate chips
For Chocolate Cream Cheese Frosting:
  • 1 16. oz Can of Chocolate Fudge Frosting or similar
  • 4 oz. cream cheese room temperature
  • 1 10 oz. Mini Cadbury Chocolate Easter Eggs
  • Sprinkles

Method
 

  1. In a mixing bowl combine the chocolate cake mix, eggs, water, vegetable oil, and the instant pudding mix.
  2. Beat with an electric mixer or by hand for about 2 minutes until all of the ingredients are well incorporated.
  3. Fold in the chocolate chips.
  4. Add the batter to your lined cupcake pan and fill each cup about 3/4 full..
  5. Bake the cupcakes according to the instructions for about 15 minutes at 375 degrees.
  6. Let the cupcakes cool before adding the frosting.
For Chocolate Cream Cheese Frosting:
  1. In the bowl of your mixer, combine the can of frosting and room temperature cream cheese.
  2. Beat until smooth and mixed well.
  3. Add the frosting to a piping bag or a Zip-Lock bag and pipe the frosting onto cupcakes. I attempted a "nest".
  4. Add a few of the mini chocolate eggs to each cupcake.
  5. Decorate with some pastel colored sprinkels to your liking.
  6. Then Refrigerate until ready to serve.
