Easy Chocolate Easter Egg Cupcakes

In need of a last minute treat to make for Spring break or Easter? Check out these cute and easy Chocolate Easter Egg Cupcakes. Start with your favorite boxed cake mix and jazz them up a bit. Then top them off with a chocolate cream cheese frosting.

I had some leftover mini Cadbury Chocolate Eggs leftover from my Easter Bunny Cupcake Cake so decided to make some chocolate cupcakes, too! These are so moist, chocolatey, and perfect all Spring long.

What you need to make these chocolate cupcakes

  • Mixer
  • Cupcake Pan ( I love my 24 cup pan so you can cook all at once)
  • Piping bag or Zip Lock Bags
  • Chocolate Cake Mix
  • Semi-Sweet Chocolate chips
  • Chocolate Frosting
  • Cream Cheese
  • Cupcake Liners
  • Mini Cadbury Eggs & Sprinkles

How to make these Easy Chocolate Easter Egg Cupcakes

In a mixing bowl combine the chocolate cake mix, eggs, water, vegetable oil, and the instant pudding mix.

Beat with an electric mixer or by hand for about 2 minutes until all of the ingredients are well incorporated.

Fold in the chocolate chips.

Add the batter to your lined cupcake pan and fill each cup about 3/4 full..

Bake the cupcakes according to the instructions for about 15 minutes at 375 degrees.

Let the cupcakes cool before adding the frosting.

For Chocolate Cream Cheese Frosting:

In the bowl of your mixer, combine the can of frosting and room temperature cream cheese.

Beat until smooth and mixed well.

Add the frosting to a piping bag or a Zip-Lock bag and pipe the frosting onto cupcakes. I attempted a “nest”.

Add a few of the mini chocolate eggs to each cupcake.

Decorate with some pastel colored sprinkels to your liking.

Then Refrigerate until ready to serve.

These chocolate Easter Egg cupcakes are easy to make, festive, and delicious.

Ingredients
  

  • 1 15 oz. Box of your favorite Chocolate Cake Mix made according to box
  • Eggs whatever it calls for add an extra one
  • water
  • vegetable oil
  • 1 3.4 oz box instant chocolate pudding
  • 1/2 cup chocolate chips

For Chocolate Cream Cheese Frosting:

  • 1 16. oz Can of Chocolate Fudge Frosting or similar
  • 4 oz. cream cheese room temperature
  • 1 10 oz. Mini Cadbury Chocolate Easter Eggs
  • Sprinkles
