Michigan Cherry Chicken Salad Apple Slices

These Cherry Chicken Salad Apple Slices are on the healthier side, fun for something a little different, and great for Brunch or a light lunch.

Ingredients
  

  • 1 ½ cups cooked shredded chicken
  • ¼ cup slivered almonds
  • ¼ cup dried cherries
  • ¼ cup finely chopped red onion or more to your liking
  • ½ cup diced celery
  • 2 tbsp whipped dressing or mayo
  • ½ cup plain Greek yogurt
  • 2 large apples

Method
 

  1. Mix chicken, almonds, cherries, onion, celery, whipped dressing, and Greek yogurt in a bowl.
  2. Stir until well combined.
  3. Slice apples about ¼ inch thick and remove the core.
  4. Spoon chicken salad onto apple slices and serve.

Notes

If you want to prepare this ahead of time, you can add some lemon juice or apple juice to your apple slices to prevent browning, or just cut the apples before they're ready to serve.
