Why I Love This Recipe
- Quick prep, no cooking needed (I actually bought the cooked chicken)
- Works great for lunches or snacks
- A simple healthy chicken salad recipe option
- A fun twist using apples instead of bread

I love adding some dried cherries to my chicken salad and was looking to make myself a healthier lunch so I decided to try something new and loved it. This chicken salad recipe uses Greek yogurt for a lighter finish and being served over apple slices gives you a nice low carb option. Don’t get me wrong- I LOVE my cherry chicken pasta salad and even chicken salad spinach wraps, but these are really good, too!
Ingredients Needed for This Cherry Chicken Salad

| 🍎 Cooked Shredded Chicken – The base of this recipe. You can use rotisserie chicken or leftover cooked chicken for an easy shortcut. 🍎 Slivered Almonds – Adds a little crunch and pairs really well with the cherries and apples. 🍎 Dried Cherries – The sweet pop that makes this Cherry chicken salad stand out. We live in Michigan so always have some Michigan Dried Cherries on hand. 🍎 Red Onion – Finely chopped for a little bite and balance in every scoop. 🍎 Celery – Brings freshness and a nice crunch to the mix. 🍎 Whipped Dressing (or Mayo) – Just a small amount to help bring everything together. 🍎 Plain Greek Yogurt – This is what makes it a chicken salad with Greek yogurt, keeping it creamy and a little lighter. 🍎 Apples – Crisp and fresh, they’re the base for serving this chicken salad with apple in a simple, fun way. |

How to Make Michigan Cherry Chicken Salad Apple Slices
Step 1: Mix Ingredients. Grab a medium bowl and just toss everything in—shredded chicken, almonds, dried cherries, red onion, celery, whipped dressing, and Greek yogurt.
Step 2: Combine. Give it a good stir until it’s all mixed together and coated. And just like that, you’ve got your Cherry chicken salad ready to go.
Step 3: Chill or Serve. You can totally dig in right away, or pop it in the fridge for a bit if you want it cold later. I usually do that if I’ve got a few extra minutes.
Step 4: Prep the Apples. While that’s hanging out, slice up your apples—about ¼ inch thick works well. Just carefully cut out the core so you get those nice little apple rounds to work with.
Step 5: Assemble. Spoon the chicken salad over the apple slices and serve right away. (or refrigerate until ready to serve).

Additions & Substitutions
- Swap dried cherries with dried cranberries
- Use walnuts or pecans instead of almonds
- Add a little lemon juice for extra freshness
- Serve in lettuce cups instead of apples if preferred
