For Chocolate Ganache
- In a medium saucepan, combine heavy cream and butter.
- Let simmer until butter is melted and cream begins to gently boil.
- Remove from heat and add chocolate chips.
- Wisk until chocolate chips melt and texture is smooth and thick.
- Pour chocolate ganache into prepared chocolate crust.
For Cherry Topping
- Wash and pit the cherries by using a straw or cherry pitter.
- Add cherries, sugar, and water to sauce pan and heat over medium heat.
- Let the fruit cook and break down until the liquids start to thicken. I helped smush the cherries a bit but you can leave them whole if you would like.
- Refrigerate both the pie and filling until ready to serve (about 4 hours).
- When ready to serve pour mixture over top of pie and slice and serve!
