My Favorite Blackened Chicken Salad

This Blackened Chicken Salad recipe is my favorite to make. Loaded with grilled blackened chicken, sweet cherries and mandarins, a little crunch from almonds, and drizzled with sweet dressing. The perfect light Summer dinner idea!

Ingredients
  

For the Blackened Chicken
  • 2 chicken cutlets or breasts, tenders, or thighs
  • Olive oil
  • 2 tbsp blackened seasoning
For the Salad
  • 3 oz mixed greens
  • 1 mandarin orange peeled
  • 1/4 cup dried cherries
  • 1/4 cup slivered almonds
  • 1/4 cup feta cheese
  • Raspberry vinaigrette

Equipment

  • 1 grill or skillet

Method
 

  1. Heat grill or cooking method of choice.
  2. Drizzle olive oil over chicken and season both sides with blackened seasoning.
  3. Cook chicken until internal temperature reaches 165°F.
  4. Assemble salad with greens, oranges, cherries, almonds, and feta.
  5. Slice chicken and place on top.
  6. Drizzle with raspberry vinaigrette and serve.

Notes

This makes approximately 2 large salads or 4 smaller servings.
