Shamrock Cake Mix Cookies

These fun and festive cake mix cookies are so easy to make and perfect for Saint Patrick's Day.

Ingredients Method

Ingredients
  

  • 1 15 oz. box of white cake mix
  • 1/2 cup vegetable oil or similar
  • 2 eggs
For White Chocolate Dip:
  • 12 oz. of your favorite white chocolate chopped (or chips work, too)
  • Irish themed or green sprinkles to taste

Method
 

  1. In a large mixing bowl combine the cake mix, the eggs, and the vegetable oil and mix until well incorporated.
  2. Scoop batter into balls and place on a parchment paper lined baking sheet (optional).
  3. Bake at 350 degrees for about 8-10 minutes or until cooked to your liking.
For White Chocolate Dip:
  1. In a glass bowl add the white chocolate and heat in 30 second intervals, stirring between each until the chocolate is fully melted and smooth. (or use double boiler)
  2. Then dip the cooled cookies into the white chocolate and set back on the parchment paper.
  3. Add green sprinkles immediately before the chocolate sets.
