Shamrock Cake Mix Cookies
These fun and festive cake mix cookies are so easy to make and perfect for Saint Patrick's Day.
Ingredients
- 1 15 oz. box of white cake mix
- 1/2 cup vegetable oil or similar
- 2 eggs
For White Chocolate Dip:
- 12 oz. of your favorite white chocolate chopped (or chips work, too)
- Irish themed or green sprinkles to taste
Instructions
- In a large mixing bowl combine the cake mix, the eggs, and the vegetable oil and mix until well incorporated.
- Scoop batter into balls and place on a parchment paper lined baking sheet (optional).
- Bake at 350 degrees for about 8-10 minutes or until cooked to your liking.
For White Chocolate Dip:
- In a glass bowl add the white chocolate and heat in 30 second intervals, stirring between each until the chocolate is fully melted and smooth. (or use double boiler)
- Then dip the cooled cookies into the white chocolate and set back on the parchment paper.
- Add green sprinkles immediately before the chocolate sets.
