Shrimp and Chorizo Burrito Bowls

Ingredients
  

  • 1 lb ground chorizo sausage
  • 1 jalapeno diced
  • 1 red bell pepper diced
  • 1/2 onion diced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chiles
  • 6 oz frozen salad shrimp or other
For Cilantro Lime Rice
  • 1 cup white or brown rice
  • 2 cups water
  • 1 lime juice
  • cilantro to taste

Method
 

  1. In saute pan over medium heat cook the chorizo sausage and add peppers and onion.
  2. Cook until meat is browned and drain any grease.
  3. Then add fajita seasoning, diced tomatoes, and shrimp.
  4. Cook until shrimp are warmed through and let sauce simmer a few minutes.
  5. Serve over rice or in tortillas.
For Cilantro Lime Rice
  1. Cook rice according to package.
  2. Then add lime juice and chopped cilantro to taste.
