One of our favorite places to eat is this Mexican Restaurant down the street. Extra tall beers, spicy salsa with chips, and and grande burrito thats filled with all the goodies. We never get to go out to eat very much anymore so I figured I would bring our favorite home.

Mike always gets this “Grande Burrito” that is stuffed with chicken, steak, chorizo, and shrimp. So I wanted to make something similar so came up with these Shrimp & Chorizo Burrito Bowls. They turned out awesome!

How to make these easy Burrito Bowls

First start by cooking the chorizo sausage with the peppers and onions.

Then once the sausage is cooked, drained any grease. Add the fajita seasoning packet, can of diced tomatoes, and the frozen shrimp.

Simmer for a few minutes until the sauce is thickened and the shrimp is heated throughout. Then make rice according to package and add lime juice and chopped cilantro.

Serve over rice or wrap the meat mixture up in tortillas!

Serve with your favorite toppings…cheese, sour cream, hot sauce, and salsa!

Shrimp and Chorizo Burrito Bowls

These Shrimp and Chorizo Burrito Bowls are easy to make, flavorful, and customizable. Great for something a little different.

Ingredients
  

  • 1 lb ground chorizo sausage
  • 1 jalapeno diced
  • 1 red bell pepper diced
  • 1/2 onion diced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chiles
  • 6 oz frozen salad shrimp or other

For Cilantro Lime Rice

  • 1 cup white or brown rice
  • 2 cups water
  • 1 lime juice
  • cilantro to taste

Instructions
 

  • In saute pan over medium heat cook the chorizo sausage and add peppers and onion.
  • Cook until meat is browned and drain any grease.
  • Then add fajita seasoning, diced tomatoes, and shrimp.
  • Cook until shrimp are warmed through and let sauce simmer a few minutes.
  • Serve over rice or in tortillas.

For Cilantro Lime Rice

  • Cook rice according to package.
  • Then add lime juice and chopped cilantro to taste.
