Skillet Baked Chicken Alfredo

This chicken fettuccine recipe all cooks together in one pan making it a great weeknight dinner. Pasta, chicken, creamy sauce, and topped with melty cheese! The whole family will love it!

Ingredients
  

  • 1 lb. chicken breasts
  • 8 oz. fettuccini noodles (half a box)
  • 16 oz. jar Four Cheese Alfredo sauce or similar
  • 2 cloves of garlic minced
  • 2 cups low sodium chicken broth
  • 1/2 cup parmesan cheese grated
  • garlic powder, onion powder, Italian Seasoning to taste (about 1/2 tsp each)
  • 1 1/2 cups mozzarella cheese shredded

Equipment

  • 1 cast iron skillet or oven proof pan or casserole dish

Method
 

  1. Rinse and remove any unwanted parts to your chicken breasts or thighs. Then cut them into about 1 inch pieces.
  2. Add the chicken, uncooked noodles, Alfredo sauce (plus a little water to rinse the jar out), broth, seasonings, parmesan cheese, and garlic to the cast iron skillet. Give everything a stir until combined and cover with foil.
  3. Bake the dish at 425 degrees F for 35 minutes.
  4. Carefully remove from oven, uncover, and give everything a stir.
  5. Add mozzarella cheese. Place back in the oven for about 10 more minutes until cheese is melted and bubbly.
