Skirt Steak Marinade For Fajitas

This easy, flavor-packed skirt steak marinade combines lime juice, garlic, and bold seasonings to create juicy, tender steak—perfect for sizzling fajitas.

Ingredients
  

For the Skirt Steak Marinade
  • 1 1-2 lb. skirt steak- sliced against the grain into strips or flank/sirloin
  • Juice from 2 limes
  • ¼ cup olive oil
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 garlic cloves minced
  • 1-2 tbsp fajita seasoning
  • 2 bell peppers sliced
  • 1 red onion sliced
  • 1-2 tsp Hot Honey or regular honey optional but highly recommended!
For the Steak Fajitas
  • flour tortillas or serve over lettuce or rice!
  • Toppings of choice: Sour cream, salsa, cheese, hot sauce, cilantro, etc. optional

Method
 

For the skirt steak marinade
  1. In a large pan or zip-top bag, combine the sliced steak, lime juice, olive oil, soy sauce, Worcestershire, garlic, fajita seasoning, and peppers and onions. Drizzle with a little bit of hot honey and give everything a toss until well combined. Marinate for at least 2 hours.
Blackstone/Flat Top Cooking Instructions for Steak Fajitas
  1. Heat your griddle to medium-high/high heat. Lightly oil the surface if needed. Pour the marinated steak and veggies onto the hot surface. Cook and toss around approximately 4 minutes on each side.
  2. If you prefer your peppers softer and more cooked, try to separate them and add a little water and cover to help them steam while the steak is cooking .
  3. Cook until the veggies are done to your liking and the steak is cooked and toss all together. On the other side of the flat top, toss down your tortillas to warm them up.
  4. Assemble your steak fajitas as desired.
Stove Top Instructions
  1. Just use a cast iron skillet or large skillet with a little cooking oil and warm up over high heat before cooking the steak/veggies. Then assemble as desired.
