I have mentioned this before but we always buy part of a cow to last us the year. And of course there are some cuts like skirt steak and flank steaks that we try to find things to make with. I love making fajitas on the Blackstone or flat top so I decided to whip up this delicious marinade, and let me tell you- the flavor was on point!

In this recipe I use skirt steak. You can also opt for flank steak or sirloin to keep it budget friendly as well!

Ingredients for this Skirt Steak Marinade for Fajitas

🫑Skirt Steak- This is a wonderful cut of steak for high heat and fast cooking.

🫑Limes– A little juice to give these fajitas an authentic taste. This also helps tenderize the steak before cooking.

🫑Olive Oil
– Used in the marinade.

🫑Soy & Worcestershire Sauce
– For a savory and salty touch. If you don’t have both one or the other works just fine.

🫑Garlic
– I love fresh garlic in pretty much everything.

🫑Fajita Seasoning
– Use your favorite seasoning packet or taco seasoning that you have. In this one I used Meat Church Fajita Seasoning.

🫑Bell Peppers
– For that classic fajita taste I used a combination of colored bell peppers.

🫑Red Onion
– Or whatever type of onion you have works.

🫑Hot Honey (or regular honey)
– This gives a tough of sweetness and helps with a little caramelization (just me-do it!)

What makes a good steak fajita seasoning

Like I mentioned I used some of our BBQ rubs that we own but you could also use a packet of your favorite store brand. And if you would rather just season the meat yourself, you can use a blend of chili powder, paprika, cumin, onion powder, salt/pepper, and a dash of cayenne if you have it for some heat!

How to Make Blackstone Fajitas (Flat top instructions)

I chose to make Blackstone steak fajitas in this post but below these instructions include stove top method! 🙂

Step 1: Marinate the Steak. In a large pan or zip-top bag, combine the sliced steak, lime juice, olive oil, soy sauce, Worcestershire, garlic, fajita seasoning, and peppers and onions. Drizzle with a little bit of hot honey and give everything a toss until well combined. Marinate for at least 2 hours.

Step 2: Preheat the Blackstone. Heat your griddle to medium-high/high heat. Lightly oil the surface if needed.

Step 3: Sear the steak mixture. Pour the marinated steak and veggies onto the hot surface. Place on the hot Blackstone and cook for 2–4 minutes per side until nicely seared.

If you like your veggies a little more cooked you can separate them and add a lid with a few squirts of water to help them steam.

Step 4: Cook & heat tortillas. Cook until the veggies are done to your liking and the steak is cooked and toss all together. On the other side of the flat top, toss down your tortillas to warm them up.

Step 5: Assemble your fajitas. Assemble your steak fajitas as desired. We like our with cheese, sour cream, and some hot sauce or salsa. You can add some cilantro or avocado, too! I even enjoyed mine over some lettuce for a little “healthier spin”.

No Blackstone? No Problem

You can cook these stove top. Just use a cast iron skillet or large skillet and warm up over high heat before cooking the steak/veggies. Then assemble as desired.

Ingredients
  

For the Skirt Steak Marinade
  • 1 1-2 lb. skirt steak- sliced against the grain into strips or flank/sirloin
  • Juice from 2 limes
  • ¼ cup olive oil
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 garlic cloves minced
  • 1-2 tbsp fajita seasoning
  • 2 bell peppers sliced
  • 1 red onion sliced
  • 1-2 tsp Hot Honey or regular honey optional but highly recommended!
For the Steak Fajitas
  • flour tortillas or serve over lettuce or rice!
  • Toppings of choice: Sour cream, salsa, cheese, hot sauce, cilantro, etc. optional

Method
 

For the skirt steak marinade
  1. In a large pan or zip-top bag, combine the sliced steak, lime juice, olive oil, soy sauce, Worcestershire, garlic, fajita seasoning, and peppers and onions. Drizzle with a little bit of hot honey and give everything a toss until well combined. Marinate for at least 2 hours.
Blackstone/Flat Top Cooking Instructions for Steak Fajitas
  1. Heat your griddle to medium-high/high heat. Lightly oil the surface if needed. Pour the marinated steak and veggies onto the hot surface. Cook and toss around approximately 4 minutes on each side.
  2. If you prefer your peppers softer and more cooked, try to separate them and add a little water and cover to help them steam while the steak is cooking .
  3. Cook until the veggies are done to your liking and the steak is cooked and toss all together. On the other side of the flat top, toss down your tortillas to warm them up.
  4. Assemble your steak fajitas as desired.
Stove Top Instructions
  1. Just use a cast iron skillet or large skillet with a little cooking oil and warm up over high heat before cooking the steak/veggies. Then assemble as desired.
