Zucchini Banana Bread

This Zucchini Bread is loaded with moisture with the addition of banana. A great way to utilize fresh zucchini and the perfect treat.

Ingredients
  

  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 4 tsp cinnamon
  • 3 eggs beaten
  • 2 cups sugar
  • 2 cups vegetable oil
  • 2 tsp vanilla
  • 2 cups grated zucchini
  • 1 banana mashed
  • 1/2 cup crushed pineapple
  • 1/2 cup walnuts optional

Equipment

  • 2 (9.5 in) loaf pans

Method
 

  1. In a medium bowl combine flour, baking soda, salt, baking powder, and cinnamon.
  2. In a separate bowl combine beaten eggs, sugar , vegetable oil, and vanilla and stir until combined.
  3. Then add in zucchini, banana, and crushed pineapple to the sugar/oil mixture.
  4. Slowly add wet ingredients to dry ingredients and stir until well combined.
  5. Fold in walnuts.
  6. Pour into greased pans.
  7. Bake at 350 for about 55 minutes until toothpick inserted comes out clean.
