As Summer comes to an end, one thing we look forward to over here is all the goodies from the garden that are finally at their peak. As I mentioned in my Taco Stuffed Zucchini post, I had a GINORMOUS zucchini hiding when we got home from camping so I made this Zucchini Banana Bread. It is so moist and flavorful, really a classic recipe.

This Zucchini Banana Bread recipe makes two large loaves because I believe that if I am getting all the stuff out for baking and taking the time to shred zucchini, might as well make two. Any who besides shredding the zucchini, this bread is actually quite simple. I did just buy a new food processor from Ninja called the Storm that I have been using a lot lately so I actually just cubed the zucchini and tossed it in there, much easier.

The addition of the banana added more flavor and moisture. This is the closest I have gotten to my mom Zucchini bread recipe!

How to make this Zucchini Bread recipe

All you have to do is combine all your dry ingredients (except sugar) in one bowl. In another bowl combine your wet ingredients. Then slowly combine wet to dry and fold in walnuts.

Then pour into greased loaf pans and bake for about 55 minutes.

This freezes well and great of you want to make smaller loaves and freeze.

Zucchini Banana Bread

Equipment

  • 2 (9.5 in) loaf pans

Ingredients
  

  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 4 tsp cinnamon
  • 3 eggs beaten
  • 2 cups sugar
  • 2 cups vegetable oil
  • 2 tsp vanilla
  • 2 cups grated zucchini
  • 1 banana mashed
  • 1/2 cup crushed pineapple
  • 1/2 cup walnuts optional

Instructions
 

  • In a medium bowl combine flour, baking soda, salt, baking powder, and cinnamon.
  • In a separate bowl combine beaten eggs, sugar , vegetable oil, and vanilla and stir until combined.
  • Then add in zucchini, banana, and crushed pineapple to the sugar/oil mixture.
  • Slowly add wet ingredients to dry ingredients and stir until well combined.
  • Fold in walnuts.
  • Pour into greased pans.
  • Bake at 350 for about 55 minutes until toothpick inserted comes out clean.
