Looking for a quick, delicious, somewhat healthy snack? Try these Strawberry Oatmeal Bars. Loaded with fresh strawberries, heart healthy oats, and super easy to make!

Sofie and I really enjoyed these we ate them within 2 days.These Strawberry Oatmeal Bars are a nice treat in the morning with your cup of coffee or a great pick me up snack during the day. These also would be great to pack up or freeze and take with you camping or to the cabin/cottage.

Very simple to make like usual these Strawberry Oatmeal Bars comes together in one bowl with staples in the pantry and fresh strawberries! I used whole wheat flour and cane sugar but you can definitely substitute regular flour and sugar as well! This recipe is also VEGAN and DAIRY FREE! So the perfect treat for anyone!

How to make these Strawberry Oatmeal Bars:

In a large mixing bowl combine the flour, oats, salt, baking soda, cinnamon, and sugar. Mix well. Then add in the vegetable oil and water.

Mix until batter forms.Then fold in strawberries.

Pour into an 8×8 baking dish or I used a loaf pan. Bake at 350 for about 35 minutes. ( I was originally going for bread but it was so moist that I cut them into bars and they are so good!

Let cool before removing from pan. Then cut into squares. Refrigerate leftovers!

These one bowl Strawberry Oatmeal Bars are so easy, loaded with flavor, and perfect for a healthy treat!

Ingredients
  

  • 1 cup whole wheat flour or regular
  • 1 cup olf fashioned oats
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup cane sugar or regular
  • 3/4 cup vegetable oil
  • 1/2 cup water
  • 1 cup diced strawberries

Instructions
 

  • In a large bowl combine all of the dry ingredients and mix well.
  • Then add the vegetable oil and water and mix until batter forms.
  • Fold in diced strawberries.
  • Pour into greased loaf pan or 8×8 pan and bake at 350 for about 35 minutes.
  • Let cool before removing from pan and cut into bars.

Notes

** I always sprinkle a little extra oats on top before baking!
