Italian Spaghetti Pasta Salad

This Italian Spaghetti Pasta Salad is another one of my favorite pasta salads for Summer! My parents always made this growing up and I still enjoy it! Very simple with just a few ingredients and loaded with vegetables from the garden.

This Italian Spaghetti Pasta Salad is so easy and perfect for a quick lunch for the week or as the perfect side for any BBQ or Summer gathering. Sofie loved it, too 🙂 Loaded with fresh tomatoes, cucumber, and green peppers.

I used a bottle of Italian dressing to keep it simple but if you want to make your own dressing go for it! I also used whole wheat pasta but any type of noodle will do.

How to make this Italian Spaghetti Pasta Salad:

First cook the spaghetti noodles according to the package and drain. Run cool water over the pasta. Then chop up the tomatoes, quarter the cucumbers, and chop up the green pepper.

In a large bowl combine the cool pasta, half of the vegetables, and half of the Italian dressing and mix. Then add the other half of all the ingredients and mix well. (this makes it easier to combine the ingredients).

Store in the refrigerator until ready to serve!

Ingredients

  

• 1 16 oz. Whole Wheat Spaghetti Noodles
• 1 Cucumber sliced & quartered
• 2 roma tomatoes chopped
• 1 green bell peppers chopped
• 1 16 oz. bottle Italian Dressing

Instructions

 

• Cook spaghetti according to the package.
• Drain and run cool water over pasta.
• In a large bowl combine half of the pasta, vegetables, and Italian dressing and mix well.
• Add the other half of ingredients and toss until well combined.
• Refrigerate until ready to serve.
