I love oatmeal if you haven’t noticed by now. I like them for breakfast, in cookies, and even in my sweet breads. So I decided to make these No Bake Pumpkin Chocolate Chip Oatmeal Bars for a little protein and healthy snack to help fuel me throughout my day.
These pumpkin chocolate chip protein bars are a great healthy little snack to make quickly, wrap, freeze and then grab and go for on the go snacks. I actually made these No Bake Pumpkin Chocolate Chip Bars to help aid in my lactation. They are loaded with heart healthy oats, ground flax, and chia seeds!
My toddler liked them too so I think you could make these to pack for lunches for the kids or yourself to take to work. I like them mid morning after my coffee just for a little something in my stomach.
Equipment Needed for these No Bake Chocolate Chip Oatmeal Bars
Large Sauté Pan
Silicone Spatula
Snack Bar Pan (or regular)
I had actually purchased a snack bar pan from Pampered Chef that I was excited to try, but Amazon has similar ones. If you don’t have one of course you can press into a normal baking dish. You may just want to use parchment paper to easily get it out of the pan. An 8×8 dish will make thicker bars.
Ingredients Needed for these No Bake Pumpkin & Chocolate Chip Oatmeal Bars
- Pure Pumpkin
- Old Fashioned Oats
- Honey
- Flax
- Chia Seeds
- Chocolate Chips
- Cinnamon
How to make these No Bake Pumpkin Chocolate Chip Oatmeal Bars
Step 1: Heat ingredients
First start by combining the pumpkin, oats, and honey in the pan. Heat over medium until you can stir the honey.
Stir it all until incorporated. Then add in the flax and chia seeds. Stir Again and the remove from heat.
Step 2: Add chocolate and place in pan
Then fold in the chocolate chips and then spoon into bar pan cavities or press into baking dish.
Then sprinkle with a little cinnamon on top.
Step 3: Refrigerate
Refrigerate until firm and pop the bars out of pan or cut into bars from the baking dish. Wrap individually and freeze. When ready to eat, grab one out and let thaw at room temperature and enjoy. Or leave a few in the refrigerator and freeze the rest.
Foods great for Lactation
I made these bars to help aid in my lactation while breastfeeding my newborn. Oats, flax, and chia seeds help aid in healthy lactation. You could also add in some brewers yeast if you wanted.

No Bake Pumpkin Chocolate Chip Oatmeal Bars
Ingredients
- 1 cup pumpkin
- 2 cups oats
- ¼ cup honey
- 1 tbsp flax
- 1 tbsp chia seeds
- ½ cup chocolate chips
- Cinnamon optional
Instructions
- In a large sauce pan, combine the pumpkin, oats, and honey.
- Heat over medium heat and stir.
- Add in the flax an chia seeds and stir again.
- Remove from heat and fold in the chocolate chips.
- Pour into a bar pan or 8×8 baking dish.
- Optional Step: Sprinkle with a little cinnamon on top.
- Refrigerate and cut into desired sized bars.
- Wrap individually and freeze and grab one when you want one!
