Do you love cookies? Do you love cake? Then you will love this Cookie Monster Poke Cake. Layer of white cake, cookies, chocolate pudding, and whipped topping!
I made this easy cake last year for Sofie’s 2nd birthday. She did and still does LOVE cookies and she liked Cookie Monster from Sesame Street, so I thought I would combine the two to make her this Cookie Monster Poke Cake!
Easy as always this cake starts with white cake mix! Then grab some cookies, chocolate pudding mix, and whipped topping! This cake it great for kids and adults alike! If you like cakes that start with cake mix, check out my Sea Salted Caramel Poke Cake, too!
How to make this Cookie Monster Poke Cake
First start by making the white cake mix according to the package. Then break up some cookies (Keebler’s Chocolate Chip/ Chips Ahoy/Store Brand) and sprinkle over the top of the batter.
Bake the cake according to the instructions. I pulled mine a little earlier then what it said (about 25 minutes). Then once the cake cools make your chocolate pudding.
Poke holes into the cake and spread the chocolate pudding over the cake. Then add some more crumbled cookie pieces to the whipped topping and spread over cake!
Serve with ice cream, milk, or more cookies and enjoy!
How to separate Egg Whites?
When a recipe calls for egg whites that just means to use the egg whites and not the yolk. You can use a separator if you have one but I just use my hands. First crack the egg over a bowl and let the yolk fall into the palm of your hand while the egg whites seep through the cracks of your fingers into the bowl. You can transfer the egg yolk back and forth to both hands until all the whites have dripped into to the bowl!

Cookie Monster Poke Cake
Ingredients
- 1 box white cake mix
- 5 egg whites
- vegetable oil according to package
- water according to package
- 10 chocolate chip cookies divided
- 1 3.4 oz. chocolate pudding
- 2 cups milk for the pudding
- 1 16 oz. tub whipped topping
Instructions
- Make the white cake mix according to the box.
- Pour batter into a greased 9×13 baking dish.
- Break 4 cookies into pieces and sprinkle over batter.
- Bake the cake according to the package (about 25 minutes at 350 degrees).
- Once cooled, make the chocolate pudding by mixing with milk.
- Poke holes into the cake and pour pudding over cake.
- Then break 4 more cookies into pieces and mix with whipped topping.
- Spread whipped topping over the cake and break a few more cookies on top for garnish.
