Trying to eat better for the new year? But still have a sweet tooth? Let me help with these Cranberry Oatmeal Chocolate Bars. They come together in one pan and set in the refrigerator.

I am not one to diet and I pretty much eat everything…. but I noticed I have been eating worse and my biggest problem is eating LATE when I get home from work. I feel that when I get home at 11 o clock at night I still need something…and usually it is not the healthiest choice. SO I decided to make a little treat that will satisfy my sweet tooth but without feeling too bad about it.

What you need for these Cranberry Oatmeal Chocolate Bars
Old Fashioned Oats– I use old fashioned oats but if you have a different kind they should be fine. Dried Cranberries– I like dried cranberries but dried cherries or even raisins would taste great. Peanut Butter– I always have peanut butter on hand but almond butter would work well, too. Chia Seeds– I like to add chia seeds for a boost of nutrition and gut health. You could also add some ground flax seeds, too. Honey– Just for a little sweetened and binder agent. Chocolate Chips– gotta have a little chocolate! Regular or mini works or even white chocolate or dark chocolate if you prefer! |

How to make these Cranberry Oatmeal Chocolate Bars
Really all your have to do is combine the oats, peanut butter, and honey over medium heat in a pan. Keep stirring until well combined.
Turn off heat and add the rest of the ingredients. Then press into a 8×8 pan. I lined mine with wax paper just to make it easier to remove and cut.. As always…. ENJOY! (guilt free I might add)

Storage
I like to package these by twos and wrap. Refrigerate some and freeze the rest.
You can wrap them individually and freeze, too! Then just pull them out when you want one or two for the day!

Cranberry Oatmeal Chocolate Bars
Ingredients
- 2 cups rolled oats
- 1 cup peanut butter
- 1/4 cup honey
- 1/2 cup Craisins dried cranberries
- 1/4 cup chocolate chips
- 1/2 tbsp chia seeds
Instructions
- In a medium sauce pan, combine oats peanut butter and honey.
- Stir over medium heat until everything is melted and well combined.
- Turn heat off then add in chia seeds, Craisins, and chocolate chips.
- Press into an 8×8 in baking dish.
- Refrigerate 1 hour, and cut into 12 bars.
