Insanely Good Cherry Chip Cake

Do you have recipes that take you back to your childhood? My mom loved cherry chip cake and I haven’t had it in years! I decided to make this Insanely Good Double Cherry Chip Bundt Cake recipe for my mom’s birthday a few weeks back and wanted to share it with you.

Cherry Chip Bundt Cake

I am the baby of six siblings who my mom would always make us a birthday cake from a boxed mix with our flavor of choice and some added cream cheese to the frosting. Well, that is kind of how I bake, too. When it was my mom’s birthday, I had made her a cherry chip cake (double stacked with frosting in between.)

Well, I don’t make too many round cakes, but I do however love Bundt cakes because they are easier to decorate and pretty for displaying! This Insanely Good Double Cherry Chip Bundt Cake starts with cake mix, with some added love for extra moisture and flavor. And then is drizzled with some canned cream cheese frosting that gets some added maraschino cherries and juice added. Double cherry chip cake!

What you need for this Cherry Chip Cake Recipe with cake mix

  • You guessed it… a box of cherry chip cake mix
  • Eggs
  • Vegetable Oil
  • Vanilla Pudding
  • Maraschino Cherries
  • Can of cream cheese frosting

I love easy cake recipes, and this one is just that. Just a few ingredients, super moist, and delicious. This cherry chip cake will be perfect for birthdays, Valentine’s Day, Christmas, or anytime you are craving an easy sweet cake!

How to make this Insanely Good Double Cherry Chip Bundt Cake Recipe

First we start off with a box of Super Moist Cherry Chip Cake Mix. Make it according to the package but I always add a pack of vanilla pudding to the mix to help with moisture (and you can add an extra egg too). Both additions will help the cam mix taste more homemade. I also added a few tablespoons of the cherry juice into the batter.

Pour into a sprayed Bundt cake pan and bake according to the box (about 35 minutes at 350 Degrees F). Once finished let cool before trying to flip onto the play you will serve on.

For the Cherry Chip Cream Cheese Frosting

Okay so I do know how to make homemade frosting, but sometimes canned frosting with some added love tastes just wonderful and is easy to pour over a bundt cake.

So take a spoonfull of the frosting and add to the plate you will have the cake on. Spread around in a circle. Then place the can of frostin gin the microwave for about 25 seconds just until pourable (do not over heat). Then chop up aout 10 cherries and add that and a couple tablespoons of the juice right to the can and mix.

How to make a cherry chip cake

Slowly drizzle the cherry frosting over the Bundt cake in desired designs. You may have a little frosting left or just keep going around until all the frosting is used up.

Then for garnish add some maraschino cherries around on the top for serving! Slice and serve. Enjoy!

How to make a cherry chip cake

Insanely Good Double Cherry Chip Bundt Cake

This Cherry Chip Bundt Cake is super easy to make with boxed cake mix and some added love for moisture and flavor.
Prep Time 10 minutes
Cook Time 35 minutes
Course Dessert
Servings 9 servings

Ingredients
  

  • 1 box Cherry Chip Cake Mix (plus oil, eggs, water) made according to box
  • 1 3.4 oz Instant Vanilla Pudding
  • 1 jar Maraschino Cherries
  • 1 12-14 oz. Can of Whipped Cream Cheese Frosting

Instructions
 

  • Make the batter according to the boxed mix instructions adding in the vanilla pudding and 2-3 tbsp. of the Maraschino cherry juice.
  • Bake according to the box at 350 degrees F for about 35 minutes.
  • Let cool.
  • Spread some of the frosting around the bottom of the plate that you will be serving on.
  • Then microwave the canned frosting for about 25 seconds (until soft and pourable).
  • Chop up about 10 cherries and add to the frosting along with about 2 tbsp. of cherry juice. Mix (right in the can works).
  • Spoon or drizzle the frosting over the cake in pattern as desired and as much as you would like.
  • Top with additional maraschino cherries for garnish. Slice, server and enjoy!
