Most years I have a Saint Patrick’s Day for friends and family. I have made this rainbow fruit tray a few times but finally perfected it. The first time I tried making it a combination of fruits and vegetables which of course you can do. But I finally got the layers I like along with the marshmallow on the end.

Ingredients Needed for this Fun Rainbow Fruit Platter

🌈Strawberries– Washed and sliced in half.
🌈Oranges/Clementines- peeled and in pieces.
🌈Pineapple Chunks-
I prefer fresh but canned works just fine.
🌈Green Grapes-
Rinse and take off of the stem.
🌈Blueberries-
Washed
🌈 Purple Grapes-R

🌈Marshmallows
– Big or small for some clouds on the side!

Selecting the right fruits for your rainbow tray

I am sure you all check your fruit before purchasing for any soft spots, discoloration, mold, etc. So that is the first step. And of course you can customize with other fruit that you see fit. There are other colored fruits that could be swapped for some of the layers of the rainbow.

Red: For the red you could also use raspberries, watermelon chunks, or even red apple slices.

Orange: You can use cantaloupe pieces, clementines, peaches, or even mango.

Yellow: You could use Opal apple slices, banana slices, or pieces of pears.

Green: Some other green fruits that could work would be kiwi, green pears, or green apple slices.

Blue: Here I used blueberries but you definitely could use blackberries or concord grapes.

Purple (violet): This layer I chose to role with some purple grapes but you could use pomegranate arils, blackberries, or even plums!

How to assemble this colorful Rainbow Fruit Tray

First wash and prep all of your fruits first for easy preparations. Then grab a platter or large cutting board and start layering in order.

First the strawberries, then oranges, then the pineapple, grapes, blueberries, and purple grapes.

Then add a handful of marshmallows to the sides to make them look like clouds. Serve right alway or cover and refrigerate until party time!

Rainbow Fruit Tray

This Rainbow Fruit Tray is easy and fun for Saint Patrick's Day, brunch, birthday parties, or just to make snacking more fun.

Servings 12 servings

Ingredients
  

  • 1 lb. Strawberries
  • 1 Orange or a couple of clementines
  • 1 cup Fresh pineapple chunks or 1 can of Pineapple Chunks
  • 1 cup Green Grapes
  • 1 cup Blueberries
  • 1 cup Purple Grapes
  • 20 Large Marshmallows or 2 cups mini marshmallows

Instructions
 

  • First wash and prep all of your fruits first for easy assembly. Then grab a platter or large cutting board and start layering in order.
  • First the strawberries, then oranges, then the pineapple, grapes, blueberries, and purple grapes.
  • Then add a handful of marshmallows to the sides to make them look like clouds.
  • Serve right alway or cover and refrigerate until party time!

Notes

You can make more or less to your party’s need. Having a large party? Make it bigger? Just a small group? Just make a little less.
