Smoked Spaghetti Squash

Why Smoked Squash

Okay so I got a little crazy this year in the garden with three spaghetti squash plants. Little did I know it would completely take over, wrap around every other plant, and produce tons of gorgeous squash for me to eat. Well- not a huge complaint, but since my hubby won’t eat it or my kids, I knew I needed to come up with a way I will enjoy it. Ta-dah… smoked squash!

Spaghetti squash is a great option to cut down on some calories and is loaded with fiber. So this can make a great healthy swap for when you are craving some pasta!

Ingredients Needed for this Smoked Spaghetti Squash Recipe

  • Spaghetti Squash
  • Olive Oil
  • Salt
  • Pepper
  • Garlic Powder
  • Cherry Tomatoes
  • Butter
  • Parmesan Cheese
  • Red Pepper Flakes

Prepare the Squash

Okay I am not gonna lie- this part is the hardest. Grab out a long sharp knife and get to cutting. The easiest way is to slice down the one side, then flip over and do the same. There will be some carving involved. Don’t ask my husband to do it- he pulled out a mini jig saw… Then cut off the stem.

Then use a large spoon to scoop out the large seeds and top layer of the squash strands. Then drizzle a little olive oil over the squash along with some salt, pepper, and garlic powder. Rub it in a little bit.

How to Smoke Spaghetti Squash on the Traeger

Preheat the smoker to 225 degrees F. I was cooking a few other things that day so it was already rolling. Transfer the squash to the smoker grates skin side down. Close the lid and smoke for anywhere between 2.5-4 hours depending on the size of you squash. Mine was huge from our garden and was still a little crunchy at 3.5 hours, smaller ones will probably take less time.

🌟 Note: If you are getting antsy towards the end…just raise the temperature of the smoker to finish it off.

For the smoked cherry tomatoes

Grab a little pan and add the cherry tomatoes to it and drizzle with a little oil. I added in the cherry tomatoes about an hour after I put the squash on. Let cook along side the squash. I also had some random sized tomatoes from the garden, to tossed those in there too. If these are cooked before the squash is sone just pull them off and set aside.

How to make smoked squash

Once the squash is soft enough to your liking (at least fork tender), pull it off. Carefully use a fork to shred the spaghetti squash into strands. Then add in some butter, parmesan cheese, the red pepper flakes, and the smoked cherry tomatoes.

Is spaghetti squash supposed to be crunchy or soft?

Spaghetti squash may have a slightly crunchy texture to it. If you are expecting soft like noodles, they may surprise you. Of course you can cook it longer so it’s softer.
