I love easy light lunches during the Summer time. I made these Strawberry Chicken Salad Croissants to take to to work for the week and loved them! These chicken salad sandwiches are cold so perfect to take to the beach, a day at the park, or when you are out relaxing by the pool on hot Summer days.
I love different chicken salads like my Cranberry Chicken Salad Spinach Wraps and my Cherry Chicken Pasta Salad. This is my first time making chicken salad with strawberries and I loved it! Light, refreshing and prefect when the strawberries are in season! And I have been craving a croissant sandwich so when I saw these at the grocery store I swooped them up!
What you need for my Strawberry Chicken Salad Croissants
- Canned chicken (or rotisserie or cooked)
- Celery
- Onion
- Strawberries
- Whipped Dressing
- Croissants
- Optional- avocado for topping
Simple, different, and perfect when you just want something light yet satisfying.
How to make these Strawberry Chicken Salad Croissants
This recipe is simple. I don’t mind canned chicken for these types of recipes but of course you can use leftover rotisserie chicken (which I never buy) or cooked and shredded chicken.
First chop up your strawberries, onions, and celery. You can use more or less to your liking.
Then in a medium bowl combine the chicken, strawberries, onion, and celery.
Add in the Whipped Dress (Miracle Whip or similar). Stir it around until everything is well combined. Refrigerate until ready to serve. Like Mayo instead? Go for it, I personally don’t care for mayo so tend to go with the whipped version instead.
When ready to eat, assemble sandwiches with toppings of choice. I added fresh slices of avocado and spinach onto the croissant. If you want to meal prep, you can make sandwiches and wrap individually for a quick grab and go lunch! You can use tortillas, spinach wraps, or pitas too!
What to serve with these easy Strawberry Chicken Salad Croissant Sandwiches
You could pack these sandwiches with some chips, fruit salad, Italian Spaghetti Pasta Salad, or a large fresh salad. Wrap them up tightly and pack in the cooler for a day out and about this Summer.

Strawberry Chicken Salad Croissants
Ingredients
- 2-3 stalks of celery chopped
- 1/2 cup chopped strawberries
- 1/2 cup chopped white onions
- 1 12. 5 oz can of chicken (or about 1 1/2 cup cooked chicken)
- 1/2 Cup Whipped Dressing
- 4-6 Croissants
- Avocado or Spinach For topping optional
Instructions
- In a medium bowl combine the chopped celery, strawberries, onions, and chicken.
- Add in the Whipped dressing and stir until all is well combined.
- Let chill and when ready to serve spoon onto croissants.
- Top with favorite toppings such as sliced avocado, fresh spinach, etc!
- Enjoy!
